What do you eat??
Well, that used to be a tough question for me to answer. You see, my breakfast and lunch are pretty easy for me to eat healthy. Dinner used to be a struggle. Kara wanted NOTHING to do with healthy--veggies, wheat pasta, clean eating... I have slowly began to introduce new meals and then revealed after the fact how healthy they are. He is coming around...
So, when I share a recipe on this page, know that it's undergone the toughest critic I know!

Chicken Parmesan**--this is one of my daughter's favorites. Absolutely "de-wish-us" as she would say
Chicken Enchilada Soup**--anything that is healthy and is a crockpot meal is a winner in my book!
Chili**--How can you go wrong with chili??
